Tomato soup is a classic soup made from tomatoes, broth or water, and various seasonings. Here’s a simple recipe for making tomato soup:

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 28-ounce can crushed tomatoes
  • 2 cups vegetable broth or water
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the crushed tomatoes, vegetable broth or water, dried basil, dried oregano, salt, and pepper to the pot. Stir to combine.
  3. Bring the soup to a simmer and cook for 20-30 minutes, until the flavors have melded and the soup has thickened.
  4. Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be sure to let the soup cool slightly before blending.
  5. If using, stir in the heavy cream and heat the soup until warmed through.
  6. Serve the soup hot, garnished with fresh herbs or croutons if desired.
